Turkey Meatloaf Muffins And Jamie Eason with Snake



My wife and I love to cook. I'm not talking about scrambling eggs or flinging a steak on a frying pan, I'm talking about looking up a recipe we have never tried before, a dish that requires more than 2 or 3 herbs and spices, and more than 3 bowls, pots and pans to prepare. If it takes less than 10 minutes to clean up afterward, you were not cooking, you were merely heating up your food.

Since there are 10 of us living in our home, originality and freshness is indispensable in keeping everyone from getting bored with the inevitable clichéd dinners that get cooked when one is too lazy or too tired to be creative.

To that end, my wife has me looking up new recipes every week. For example, we love the challenge of finding different ways to cook meatloaf and so I was very excited when I came across Jamie Eason's Turkey Meatloaf Muffins (1).

While looking up the bio for Ms Eason I came across a snake photo shoot she did with photographer Amir Marandi.

Although ostensibly this article is about a turkey meatloaf muffin recipe, and certainly my wife and I found the muffins delicious and fun to make, I find that photos of women and snakes equally delicious.

Turkey Meatloaf Muffins

Calories: 80
Fats: 2 grams
Carbs: 4 grams
Protein: 11 grams

Ingredients:


  • 2 lbs ground turkey (or chicken)

  • 3 egg whites
  • 1 cup quick cooking oats

  • 1/2 tsp ground cumin

  • 1/2 tsp dried thyme

  • 2 tsp dry yellow mustard

  • 2 tsp black pepper

  • 2 tsp chipotle pepper spice

  • 1 tsp salt

  • 2 tbsp garlic powder (2 cloves minced)

  • 1 small onion (finely chopped)

  • 2 celery stalks (finely chopped)


Directions:

  1. Preheat oven to 375 degrees.

  2. Spray muffin pan with canola or olive oil.

  3. Mix all your ingredients together in one large bowl.

  4. Roll the mixture into balls and place in muffin pan. Muffins should be about the size of a racquetball.

  5. Bake for 40 minutes.

Makes 12 muffins.

Serving Size:
Women: 2 muffins
Men: 4 muffins
